We've teamed up with one of the best chefs in the country - Trevor Ward, former head chef in the fine dining restaurant at The Old Course Hotel in St Andrews and now working his magic round the corner at the Fleece Bar and Kitchen.
In their own words:
"Between them, Tracey and Trevor have over 60 years experience in the Hospitality and Catering Industry and have gained experience in a wide variety of different establishments. Tracey began her career in the Travel Industry and moved into Hotels in 1990 as Reservations Manager at The Mount Royal Hotel on Edinburgh’s Princes Street. After moving within the Hotel Group a few years later, she decided to focus on Front of House Operations. Trevor has worked in some of the top Hotels in the UK and was Head Chef in the fine dining restaurant at The Old Course Hotel in St Andrews – where he was the first Chef in the Hotels history to be awarded 3 AA Rosettes in The Grill Restaurant in 2004. Their Son Ryan has recently completed and passed a Modern Apprenticeship to be a Chef - he now works alongside Trevor in the Kitchen full time."
